During cooking the skin cracks and the corns become black after drying. The taste of black pepper is spicy and aromatic. The main active ingredient in pepper is piperine, this also gives the sharp taste. There are white, black, red and green peppercorns. Still, they are all coming from the same pepper-plant (Piper nigrum). It is probably the most used herbal in this world. Pepper has several health benefits: It is a source of vitamin C, an powerful antioxidant. Pepper also improves the digestion process, has an antibacterial function, supports the liver and enhances the function of kurkuma.
