Shoyu is a Japanese soy sauce that is naturally made of soy beans, wheat, sea salt and spring water by fermentation. During the fermentation arises sugars by degradation of the starch, because wheat is also used. This gives a somewhat sweeter taste. The soy sauce contains a lot of salt and has to be used sparsely. It can be used in marinades, dishes, as dip sauce, as substitute of Chinese light soy sauce or ketjap asin.
