Fennel (Foeniculum vulgare) is a plant from the umbel family. Both the tuber, the leave, and the seed is suited for consumption. After flowering, the seeds are formed, which are dried and used as a spice. Fennel seed has a subtle anise taste. It is an essential ingredient in Indian curry's, an important ingredient of the Chinese five-spice powder and it is the herb for fish in the French and Italian kitchen. Fennel seed can i.e. be used in stew pies, meat- and chicken dishes, salades and omelettes. It works well in combination with cinnamon, cumin, fenugreek and szechuan pepper. The best way to use this medicinally is to make tea of it: a spoon squashed fennel seeds per cup, let hot water draw for 10 minutes. It is used as a cure against cramps. Its also an anti-inflammatory agent, painkiller and antioxidant.
