Pine kernels have a creamy, nearly buttery texture and are a delicious addition to all kinds of dishes. The mild taste will further be enhanced by roasting the pine kernels shortly in a dry baking pan. Please be careful, they are so small that you can easily roast them too dark. Pine kernels are very versatile, and suitable for both savory and sweet dishes. They are for example, a classic ingredient in pesto, but you can also use them perfectly for cookies or pastries. Pine kernels are rich in unsaturated fats, especially oleïne, which is also the most important unsaturated fatty acid in olive oil. Unsaturated fat contributes to the lowering of LDL-cholesterol. The nutritional center advises to eat products with unsaturated fats as far as possible, instead of products with saturated fats.
